Curried Chicken Recipe (Kari Ayam) (Serves 2-3)

What you will need:

  • 90g Mama Tan’s Curry Paste
  • 400g boneless chicken thigh (cut into bite size cubes)
  • 2 medium potatoes (peeled & cut into cubes)
  • 200ml coconut milk or single cream
  • 20-40ml water
  • 1 tbsp. soy sauce (optional)
  • Sea salt to taste

Mamatan's Curried Chicken!

To prepare:

  1. Marinade the chicken with Mama Tan’s Curry Paste in a bowl, making sure its coated well.
  2. Cover with cling film and place in the fridge for at least an hour, or better still overnight.
  3. Heat oil in a wok or saucepan and fry chicken for about 1-2 minutes.
  4. Add about 2 tbsp. of water then add the potatoes and cook for a further minute. Stirring all the time to avoid sticking.
  5. Add coconut milk or single cream and simmer on medium heat with lid on for about 15-20 minutes until potatoes are cooked.
  6. Serve with plain boil rice and garnish with fresh slice cucumber.

(Hints and tips)

My dad loves to add a tiny amount of light soy sauce on his curry. I tried it and love it, why not give it a go and see if you like it too?
