Vegetable Stir-Fry with Peanut Sauce Recipe (serves 2)

What you will need:

    Peanut Sauce:

  • 100g Mama Tan’s Peanut Paste
  • 120ml boiling water
  • Add 100g Peanut Paste to 120ml boiling water in a saucepan on a medium heat. Stirring continually to avoid burning and it’s ready once sauce is hot and thickened.

  • 1 medium onion, sliced
  • 1 red pepper, seeds removed, thinly sliced
  • 1/2 pack mangetout, green beans/ sugar snap peas or handful of broccoli
  • 1/2 pack baby sweetcorn
  • 100g firm tofu (cut into bite size and deep fry until golden brown)
  • 100g spinach
  • 1 tbsp vegetable oil
  • 2 tbsp light soy sauce
  • 50ml water

To prepare:

  1. Heat the oil in a large frying pan or wok and fry the onions for 2 minutes or until translucent. Add all the vegetable and tofu except spinach to the pan with 1-2 tablespoosn of water and stir fry for 2-3 minutes.
  2. Stir in the peanut sauce, light soy sauce and spinach. Continue to stir-fry over a medium heat with remaining water (2-3 tablespoon) for 1 minute or until vegetable are cooked through.
  3. That's it ready to serve with plain boiled rice or plain couscous. .
  4. (Hints and tips)

    Why not try making this into a noodle dish too? You need 2 nests of egg noodles, cooked according to the packet instruction. Add in the cooked noodles and stir to combine and add to above (no. 2). Add couple of tbsp. of water if the dish starts to dry up or sticking to the bottom of the pan. There you have vegetable stir-fry noodles with satay peanut sauce. Enjoy!
