Malaysian Laksa Recipe (serves 2-3) (see also: Vegetarian Laksa)

What you will need:

  • 100g Mama Tan’s Laksa Paste
  • 100g chicken breast (cut in thin strips)
  • 80g king prawns (shelled and deveined)
  • 150g beansprout
  • 350g fresh rice vermicelli noodles
  • 200ml coconut milk or single cream
  • 600ml water
  • 1 chicken or vegetable stock cube
  • 2 tbsp. light soy sauce


Mamatan's Chicken Laksa!

To prepare:

  1. Boil 600ml of water in a saucepan and add chicken. Cook for about 10 minutes or until cooked. Remove the cooked chicken from the water and add the king prawns, bring to the boil again and cook for about 1 minute or until tuned pink and thoroughly cooked. Remove the prawns and this water now becomes the basis of your stock.
  2. Add to this stock, Mama Tan’s Laksa Paste, coconut milk, stock cube and soy sauce. Bring to the boil and stir until Laksa paste has dissolved. Leave to simmer in low heat while preparing for the next stage.
  3. In another saucepan, boil 500ml of water and quickly blanch beansprout (2-5 seconds) and remove from the boiling water. Then in the same boiling water, add the fresh rice vermicelli (1-2 minutes) and drain.
  4. To serve, put noodles in a bowl, arrange the cooked chicken, cooked king prawns and beansprout on top, and top off with the Laksa soup and da-tah enjoy!

(Hints and tips)

Try a squeeze of lemon juice with the laksa for lighter and fresher taste.
