Indian Rojak Recipe (serves 2)

What you will need:

  • 200g Mama Tan’s Peanut Paste
  • 1/4 cucumber (unpeeled and cut into julienne)
  • 150g beansprout (blanched)
  • 150g boiled potatoes (cubes)
  • 150g fried firm tofu (cubes)
  • Vegetable oil for frying

To prepare:

  1. Peel and boil potatoes for 10 – 15 minutes or until soft. Drain and set aside.
  2. Heat oil in a pan and shallow fry tofu until golden brown on a medium heat. Then set aside.
  3. Blanch beansprouts in 500ml of boiling water for 3 – 5 seconds and remove. Set aside.
  4. Add Mama Tan’s Peanut Paste to 200ml boiling water in a saucepan on a medium heat. Stirring continually to avoid burning. Once it's hot and thickened, set all the ingredients out on a dish and pour over the hot Mama Tan’s Peanut Sauce.
  5. That's it ready to serve!
